Red Wine Rubino Fornazarič – Vipava Valley, Slovenia


The winegrower: The Fornazarič Family.
Region: Vipava Valley, Slovenia.
Alc.: 14 % vol.
Sweetness: Semi dry.
Vintage: 2017 – 2019
Volume: 750 ml.
Grape variety: 80% Merlot, 20% Cabernet Sauvignon. Terraced vineyard, breeding single guyot.
Harvest: Hand Picking. Merlot in late September / Cabernet Sauvignon beginning of October.


Vinification:
Longer maceration, 24-month maturation in oak barrels, then another year the varieties are matured together, followed by the addition of sweet wine from dried grapes. Further maturation takes place in bottles. Ageing potential: 2022 – 2029.

Characteristics:
Deep ruby colors. Extremely fruity bouquet of ripe strawberries, cherries, leather and dark chocolate. The wine should be aerated to breathe. Very ripe and juicy wine with a soft texture. Intense in the mouth, acids are quite high but well balanced with complex and flexible tannins. Deep, fresh and elegant velvet aftertaste.

Food pairings:
Good for lighter game, such as venison or mouflon fillets, and for combining meat with fruit sauces.
