Red Wine Teran Emil Tavčar – Kras, Slovenia

Vinification: 
Maceration takes place for 9 days in contact with the skins in a stainless steel container. Gentle compression with a pneumatic press. Spontaneous fermentation. Maturation 36 months in oak barrels and 6 months in bottles. The wine is unfiltered. Ageing potential: 2020 – 2030.

Characteristics: 
The wine has a deep red-violet color with bright ruby ​​reflections. The wine is not filtered, which makes the color softer and warmer. Despite three years of aging in a barrique and another two years in a bottle, the bouquet seems very fresh. A rich fruity aroma of dark fruits with a light but persistent woody background. Ripe notes are felt, probably partially dried grape berries. In the mouth, the wine is dry and mineral. Typical Teran density followed by velvety. Woody notes become quieter, only Teran is felt, the real Teran born on the red soil of Kras. Clean and fresh finish, calm and medium-long and stable. 

Food pairings: 
Teran goes well with hard cheeses, but even better with ham, prosciutto, salami and other smoked meat delicacies. Serving temperature: 14-16° C.  They say that people of Kras drink some Teran in the morning along with coffee. And sometimes even instead of coffee… maybe worth a try?
