White Wine Malvasia Emil Tavčar – Kras, Slovenia

Vinification:
Maceration takes place for 5 days in contact with the skins in a stainless steel container. Gentle compression with a pneumatic press. Maturation 36 months in oak barrels and 6 months in bottles. The wine is unfiltered. Ageing potential: 2020 – 2030.

Characteristics:
The wine is golden yellow in color with very warm and soft amber hues. The aroma is complex and multi-layered. Apricot and acacia, as well as oregano and thyme stand out clearly. Then a persistent honey aroma appears with hints of white flowers and ripe peach. After a short aeration, the glass is filled with subtle aromas of spices and spices, which, however, quickly disappear. Dry and mineral taste in the mouth, still fresh and light. Five days of maceration gave the wine a light viscosity and a very lively, even slightly wild character, which is unusually combined with the honey-floral softness typical of Malvasia. The finish is short and harmonious, the wine leaves smoothly and predictably.

Food pairings: 
The wine goes very well with risotto or pasta with vegetables and seafood, as well as with soft white cheeses. Serving temperature: 10-12° C.
